The castle of Sant Julià de Ramis is our location to continue the development and new challenges of conceptual, spiritual and recreational growth, a space to grow our teams, activate internal talent and build a gastronomic, cultural and environmental stage. Joan, Josep and Jordi Roca

Situated on the hillside of Sant Julià, near Girona, Esperit Roca rises from the shell of a 19th-century circular fortress to embody a bold and evocative vision of hospitality. Conceived by the renowned Michelin-starred Roca brothers and beautifully designed by Andreu Carulla, the project is both a tribute to heritage and a forward-looking expression of authenticity, locality, and sustainability.

Designing with purpose

The brothers' most ambitious endeavour, Esperit Roca is an evolving concept that houses a hotel, a restaurant, a distillery, an exhibition space and a wine cellar. The monumental stone architecture of the site, coupled with Carulla’s refined brutalist sensibility, delivers a spatial narrative rooted in the land, memory and material honesty.

The aim of the design was clear: to convey timelessness and honour the legacy of the Roca family’s culinary and creative ethos. Carulla’s response was to embrace the raw power and character of the site, amplifying its original features through minimal intervention and bold material choices. Every decision – down to the smallest detail – was guided by authenticity.

Carulla’s approach was one of reverence for local materials, traditional construction techniques and the surrounding environment. By working with what the site offered – concrete, terracotta, muted tones and the textures of aged metal – the design reflects the rugged beauty of the mountain and the refined character of the Roca chefs’ brand. Even the restaurant’s oaks are borrowed from the landscape, softening the raw concrete with a sense of quiet continuity between inside and out.
